Admittedly the cajun bit of the chicken was done by cheating (thankyou Schwarz Cajun spice mix) but there are several ways to do this authenticaly (you could also do it as a jerk style chicken with marinade) that I'll try and remember to mention when I write the recipe up, but the pineapple salsa was made from fresh and does look rather tasty even if I do say so myself ;)
Oh, and the chicken breast looks like a mutant because whilst I understand the theory behind butterflying a chicken breast, in practice it goes wrong. Every time.
